A favourite with the vegetarians, paneer made from milk is quite common, especially paneer recipes are quite popular in the Indian subcontinent. You can make it fresh, chhena – an another version or just use the ones that are readily available in the market to prepare everything from simple snacks, curries, sabzis, mithais, desserts and the likes. An ingredient that can be relished in the raw form too – try serving it as a starter just sprinkled with a little chaat masala, black salt and chilli powder!

Ingredients for Dum Paneer Kalimirch Recipe

  • Paneer (cottage cheese) cut into cubes 400 grams

  • Black peppercorns crushed 2 teaspoon

  • Oil 2 tablespoons

  • Browned Onions 1 cup

  • Bay leaf 1

  • Cinnamon 1 inch stick

  • Green cardamoms 3-4

  • Cloves 3-4

  • Cumin seeds 1 teaspoon

  • Ginger-garlic-green chilli paste 2 tablespoons

  • Coriander powder 2 tablespoons

  • Cumin powder 1 teaspoon

  • Garam masala powder 1 teaspoon

  • Yogurt whisked 1 1/2 cups

  • Fresh coriander leaves finely chopped 2 tablespoons

  • Fresh mint leaves finely chopped 2 tablespoons

  • Salt to taste

Method

Step 1

Heat oil in a non-stick frying pan. Grind browned onions with ¼ cup water to a fine paste.

Step 2

Add bay leaf, cinnamon, green cardamoms, cloves and cumin seeds to the pan and sauté till fragrant.

Step 3

Add ginger-garlic-green chilli paste and browned onion paste and mix well. Swirl ½ cup water in jar in which browned onions were ground and add.

Step 4

Add paneer, coriander powder, cumin powder and garam masala powder and mix well.Add yogurt and mix well.

Step 5

Add coriander leaves, mint leaves and salt and mix. Add black peppercorns and mix well. Cook on low heat for 10-12 minutes. Serve hot.
