Ingredients
- 8 eggs
- 2 tbsps oil
- 2 medium onions, chopped
- 3-4 green chillies, chopped
- 2 medium tomatoes, chopped
- 1½ tsps red chilli powder
- 1 tsp coriander powder
- ¼ tsp turmeric powder
- ½ tsp garam masala powder
- Salt to taste
- 2 tbsps chopped fresh coriander leaves
- Fresh coriander sprig for garnish
- Toasted pavs to serve
Method
- Break the eggs in a bowl and whisk for a few seconds.
- Heat oil in a non-stick pan, add onions and green chillies and sauté for 2 minutes or till the onions turn translucent.
- Add tomatoes, mix and sauté for 2-3 minutes. Add red chilli powder, coriander powder, turmeric powder and garam masala powder and mix well. Cook for 1 minute.
- Add salt, mix and cook for 1-2 minutes. Add the eggs mixture and continue to mix and cook for 2-3 minutes more.
- Add coriander leaves, mix and take the pan off the heat. Transfer into a serving bowl, garnish with coriander sprig.
- Serve hot with toasted pavs.
