Ingredients list for Egg Curry with Coconut milk

  • 5 Eggs boiled and peeled
  • 2 cups Coconut Milk
  • 4 tablespoons Oil
  • 2 Green cardamoms
  • 2 Stick Cinnamon
  • 2 Cloves
  • 1 medium Onion sliced
  • to taste Salt
  • 4 Green chillies
  • 1/4 cup coriander leaves chopped
  • 1 tablespoon Ginger-garlic paste
  • 1 teaspoon Coriander powder
  • 1 teaspoon Garam masala powder
  • 1/2 teaspoon Turmeric powder

Method

  1. Heat oil in a non stick pan. Add cardamom, cinnamon and cloves.
  2. Add onion, sprinkle salt and saute till onion turns golden brown in colour.
  3. Add chilles, coriander and ginger- garlic paste. Sauté for two minutes.
  4. Add bell pepper, coriander powder, garam masala and turmeric powder. Mix well.
  5. Add eggs, coconut milk. Check the seasonings.
  6. Simmer for ten minutes.
  7. Serve hot.
