Goan Potato Cashew Curry

With a base of mashed potatoes and cashewnuts which add a lovely creamy bite to each mouthful – this mild potato and cashew curry along with steamed rice will comfort you even on the most stressful days. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 4 medium potatoes, boiled, peeled and mashed
  • 15 cashewnuts, soaked
  • 2-3 tablespoons ghee
  • 1 teaspoon cumin seeds
  • ¼ teaspoon asafoetida
  • 6-8 curry leaves
  • 2 medium onions, finely chopped
  • 2-3 green chillies, finely chopped
  • ¼ teaspoon turmeric powder
  • Salt to taste
  • A pinch of sugar
  • 2 tablespoons chopped fresh coriander leaves 

Method

  1. Heat ghee in a non-stick pan. Add cumin seeds and let them change colour.
  2. Add asafoetida and curry leaves and sauté for a few seconds. Add onions and green chillies and sauté on medium heat till the onions turn golden brown.
  3. Add turmeric powder and sauté for a few seconds. Add potatoes, 1cup water and cashewnuts and mix well.
  4. Add salt and sugar and mix well.Cover and cook on low heat for 4-5 minutes.
  5. Garnish with coriander leaves and serve hot.
