By Sanjeev Kapoor 06 Mar 2019 in Recipes Veg New Update Goan Potato Cashew Curry Main Ingredients Potatoes, Cashewnuts Cuisine Goan Course Main Course Vegetarian Prep Time 16-20 minutes Cook time 11-15 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients 4 medium potatoes, boiled, peeled and mashed 15 cashewnuts, soaked 2-3 tablespoons ghee 1 teaspoon cumin seeds ¼ teaspoon asafoetida 6-8 curry leaves 2 medium onions, finely chopped 2-3 green chillies, finely chopped ¼ teaspoon turmeric powder Salt to taste A pinch of sugar 2 tablespoons chopped fresh coriander leaves Method Heat ghee in a non-stick pan. Add cumin seeds and let them change colour. Add asafoetida and curry leaves and sauté for a few seconds. Add onions and green chillies and sauté on medium heat till the onions turn golden brown. Add turmeric powder and sauté for a few seconds. Add potatoes, 1cup water and cashewnuts and mix well. Add salt and sugar and mix well.Cover and cook on low heat for 4-5 minutes.
