Ingredients list for Green Mango And Peanut Rice

  • 1 1/2 cups Rice
  • 1 small Raw Mango grated coarsely
  • 1/2 cup Peanuts deep fried
  • to taste Salt
  • 2 tablespoons Ghee
  • a pinch Asafoetida
  • 2 Whole dry red chillies halved
  • 1 tablespoons Split black gram skinless (dhuli urad dal)
  • 1 tablespoon Split Bengal gram (chana dal)
  • 1 teaspoon Mustard seeds
  • 10-12 Curry leaves
  • 1/2 teaspoon Turmeric powder
  • 2 tablespoons Fresh coriander leaves chopped

Method

  1. Soak rice in four to five cups of water for about thirty minutes. Drain and then cook in four cups of boiling salted water until almost done. Drain and set aside.
  2. Heat ghee in a shallow pan or a kadai. Add a pinch of asafoetida. Add red chillies, dhuli urad dal and chana dal. Cook till dals change colour to light brown. Add mustard seeds.
  3. As mustard seeds crackle, add curry leaves and turmeric powder. Stir-fry for half a minute. Add cooked rice, grated raw mango, peanuts and salt.
  4. Mix well, cover and cook on low heat for about five minutes. Garnish with coriander leaves and serve hot.
