How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Green Mango And Peanut Rice Recipe

  • Rice 1 1/2 cups

  • Raw Mango grated coarsely 1 small

  • Peanuts deep fried 1/2 cup

  • Salt to taste

  • Ghee 2 tablespoons

  • Asafoetida a pinch

  • Whole dry red chillies halved 2

  • Split black gram skinless (dhuli urad dal) 1 tablespoons

  • Split Bengal gram (chana dal) 1 tablespoon

  • Mustard seeds 1 teaspoon

  • Curry leaves 10-12

  • Turmeric powder 1/2 teaspoon

  • Fresh coriander leaves chopped 2 tablespoons

Method

Step 1

Soak rice in four to five cups of water for about thirty minutes. Drain and then cook in four cups of boiling salted water until almost done. Drain and set aside.

Step 2

Heat ghee in a shallow pan or a kadai. Add a pinch of asafoetida. Add red chillies, dhuli urad dal and chana dal. Cook till dals change colour to light brown. Add mustard seeds.

Step 3

As mustard seeds crackle, add curry leaves and turmeric powder. Stir-fry for half a minute. Add cooked rice, grated raw mango, peanuts and salt.

Step 4

Mix well, cover and cook on low heat for about five minutes. Garnish with coriander leaves and serve hot.
