By Sanjeev Kapoor 04 May 2016 in Recipes Course New Update Main Ingredients Mutton, Split red lentils Cuisine Hyderabadi Course Main Course Mutton Prep Time 26-30 minutes Cook time 31-40 minutes Serve 4 Taste Spicy Level of Cooking Moderate Others Non Veg Ingredients list for Khichra 400 grams Mutton 1/2 inch cubes Split red lentils 2 tablespoons Split red lentil (masoor dal) soaked 2 tablespoons Split pigeon pea (toor dal/arhar dal) soaked 2 tablespoons Split Bengal gram (chana dal) soaked 2 tablespoons Split green gram skinless (dhuli moong dal) soaked 1/2 cup Broken wheat (dalia/lapsi) soaked 1/4 cup Basmati rice soaked 3 tablespoons Pure ghee 2 inch stick Cinnamon 5-6 Green cardamoms 5-6 Cloves 1 medium Onion sliced 4 Green chillies slit 2 teaspoons Ginger paste 2 teaspoons Garlic paste 1/2 teaspoon Turmeric powder 2 teaspoons Red chilli powder 1 teaspoon Garam masala powder 1/2 cup Deep fried onions 2 tablespoons Fresh mint leaves chopped to taste Salt 2 tablespoons Lemon juice Method Heat ghee in a pressure cooker. Add cinnamon, green cardamoms and cloves and sauté till fragrant. Add onion and sauté for two to three minutes. Add mutton and continue to sauté. Add green chillies and ginger paste and garlic paste and sauté for two minutes. Add all the dals and broken wheat and mix. Add five cups of water and mix and let it come to a boil. Add turmeric powder, red chilli powder, garam masala powder and half the fried onions. Mix and add rice, mint leaves and salt. Mix well. Cover the cooker with the lid and cook under pressure for four to five whistles. Open the lid when the pressure has reduced. Using a hand blender mash the mixture. Add lemon juice and serve hot garnished with the remaining fried onion and mint sprigs.
