Ingredients list for Kokum aur Nariyal ka Pulao

  • 2 cups Scraped Coconut soaked
  • 1 cup Kokum Petals
  • 6-7 Kokum petals
  • 1 tablespoon Ghee
  • 1/2 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 15-17 Cashewnuts
  • 1 medium Carrot cut into small cubes
  • 10-15 Curry leaves
  • 2-3 Dried red chillies
  • 1/2 cup Green peas
  • to taste Salt
  • for garnis a few Mint

Method

  1. Adjust the rice cooker on cooking mode. Heat ghee in the rice cooker, add mustard seeds, cumin seeds and cashewnuts and sauté till fragrant.
  2. Add carrot, curry leaves, dried red chillies and sauté for 2-3 minutes. Add rice, coconut, kokum petals, green peas, salt and 3¾ cup water.
  3. Mix well and cook for 15-18 minutes or till done. Transfer onto a serving plate, garnish with mint sprig and serve hot.
