Ingredients list for Lilva Rice

  • 1 1/2 cups Rice soaked for 30 minutes and drained
  • 100 grams Surti papdi
  • 3 tablespoons Ghee
  • 4 Cloves
  • 1/2 inch Cinnamon
  • 1 inch Ginger chopped
  • 2-3 Green chillies chopped
  • 3 tablespoons Green chutney
  • to taste Salt
  • 2 teaspoons Lemon juice
  • to garnish Fresh coriander sprigs

Method

  1. Heat ghee in a non-stick deep bottom pan, add cloves, cinnamon stick, ginger and green chillies, mix and sauté till fragrant.
  2. Add surti papdi, mix and sauté for 2 minutes. Add rice and mix well. Add green chutney and mix well. Add 2½ cups water and mix well. Add salt and mix well. Cover and cook till rice is done.
  3. Switch the heat off, add lemon juice and mix well.
  4. Transfer into a serving bowl, garnish with coriander sprig and serve hot.
