This recipe is from FoodFood TV channel By Sanjeev Kapoor 24 Aug 2016 in Recipes Course New Update Main Ingredients Chicken on Bone, Potatoes Cuisine Peruvian Course Main Course Chicken Prep Time 0-5 minutes Cook time 2-2.30 hour Serve 4 Taste Mild Level of Cooking Moderate Others Non Veg Ingredients list for Lima Chicken 750 grams Chicken on Bone cut into 8 pieces on the bone 2 medium Potatoes 1 tablespoon Garlic crushed 2 tablespoon Lemon juice 1 Lemon 2 Green chillies 2 Fresh red chillies 5-6 Pickled jalapeno 1 tablespoon Oil 2 medium Onions 4-5 Fresh oregano sprigs 3-4 Fresh coriander sprigs 6-7 Fresh mint sprigs to taste Salt to taste Crushed black peppercorns 1 teaspoon Cumin powder 2-3 cups Chicken stock Method Combine garlic and lemon juice in a bowl. Grate rind of a lemon in a bowl. Roughly chop green, red chillies and jalapenos and add. Add chicken pieces and mix well. Roughly tear fresh oregano leaves and add. Roughly chop coriander and mint sprigs and add. Add salt and crushed peppercorns and mix well. Keep aside to marinate for 1-2 hours. Heat oil in a non-stick pan. Roughly dice onions and potatoes and add to the pan and mix. Cover and cook till the potatoes are half done. Open the lid and add cumin powder and mix well. Add marinated chicken pieces and chicken stock and mix well. Adjust salt and mix well. Cover and cook till the chicken and potatoes are done. Transfer in a serving bowl and serve immediately.
