The capital city of Himachal Pradesh in India, Shimla has many farms of capsicum. Hence, the Hindi name. Besides this, though not loved by all, this veggie is the most essential whenever you plan to dish-up an Indo-Chinese recipe. Stuff them up with cheese, beans, other veggies or meats or just make a simple sabzi, it will surely add that exciting crisp to your creations!

Ingredients for Pepper Garlic Rice - SK Khazana Recipe

  • Green capsicum cut into small cubes 1 medium

  • Red capsicum cut into small cubes 1 medium

  • Yellow capsicum cut into small cubes 1 medium

  • Garlic cloves sliced 3-4

  • Basmati Rice 1 1/2 cups

  • Salt to taste

  • Oil 2 tablespoons

  • Spring onion bulb chopped 1

  • Crushed black peppercorns to taste

  • Soy sauce 2 tablespoons

  • Vinegar 1 teaspoon

  • Spring onion greens chopped 1 stalk

  • Garnish

  • Fried garlic

  • Spring onion greens diagonally sliced drops


Step 1

Take Basmati Rice in a bowl. Add water and set aside for 30-40 minutes. Drain the rice and set aside.

Step 2

Heat sufficient water in a nonstick pan, add salt and rice, cook till ¾ done. Strain and set aside.

Step 3

Heat oil in a non-stick pan, add spring onion bulb and garlic saute for 2-3 minutes.

Step 4

Add green capsicum, red capsicum, and yellow capsicum and saute for 1-2 minutes.

Step 5

Add rice and mix well. Add salt, crushed pepper and soy sauce and mix well.

Step 6

Add vinegar and spring onion greens mix well.

Step 7

Serve hot garnished with fried garlic and spring onion greens.
