Ingredients list for Quinoa Lemon Rice - SK Khazana

  • 3 cups Quinoa cooked
  • 1 tablespoon Lemon juice
  • 2 tablespoons Oil
  • 1/4 teaspoon Raw peanuts
  • 1/2 teaspoon Mustard seeds
  • 1/2 teaspoon Bengal gram (chana)
  • 1/2 teaspoon Split black gram skinless (dhuli urad dal)
  • 2 Dried red chillies broken
  • 7-8 Curry leaves
  • 1/2 teaspoon Turmeric powder
  • to taste Salt
  • for garnish Fresh coriander sprigs

Method

  1. Heat oil in a non-stick pan on medium heat, add peanuts and sauté for 2 minutes. Add mustard seeds, split Bengal gram, split black gram , broken red chillies. Sauté for a few seconds.
  2. Add curry leaves and turmeric powder and mix well. Add cooked quinoa and mix well. Add salt, mix well and cook for 3-4 minutes.
  3. Add lemon juice and mix well.
  4. Transfer into a serving bowl, garnish with coriander sprig and serve hot.
