By Sanjeev Kapoor 08 Jan 2016 in Recipes Course New Update " frameborder="0" allowfullscreen> Main Ingredients Quinoa, Tomato Cuisine American Course Salads Prep Time 6-10 minutes Cook time 11-15 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Quinoa Salad 1 cup Quinoa 1 medium Tomato chopped 1 medium Green bell pepper chopped 1 medium Cucumber peeled and roughly chopped 1 tablespoon Fresh coriander leaves chopped 1 teaspoon Extra-virgin olive oil 2 tablespoons Lemon juice to taste Salt to taste Black pepper powder for garnishing Fresh coriander sprigs Method Rinse quinoa in water, strain and boil in 1½ cups water for 5-7 minutes. Remove from heat, add 1 teaspoon olive oil and set aside. Combine quinoa, tomato, bell pepper, cucumber, chopped coriander in a bowl. Mix well. Combine 2 tablespoons olive oil, lemon juice, salt and black pepper powder in another bowl. Mix well and add to salad. Toss to mix.
