Ingredients list for Southern Style Fried Chicken

  • 750 grams Chicken on the bone cut into large pieces
  • 2 cups Buttermilk
  • to taste Salt
  • ½ cup Refined flour (maida)
  • 1 tablespoon Cajun spice
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Black pepper powder
  • 1 teaspoon Cayenne pepper
  • 1 teaspoon Paprika
  • to deep fry Oil
  • Butter
  • 2 tablespoons Garlic finely chopped
  • to taste Crushed black peppercorns
  • ½ cup Fresh cream
  • a few sprigs Fresh parsley chopped

Method

  1. Make incisions on the chicken pieces and put them in a bowl. Add salt, buttermilk and set aside for two to three hours.
  2. Mix together refined flour, Cajun spice, garlic powder, onion powder, pepper powder, cayenne powder, paprika and salt in a bowl.
  3. Strain the chicken pieces and reserve the buttermilk in the same bowl.
  4. Heat sufficient oil in a pan.
  5. Coat the chicken pieces in the flour mixture, dip in the buttermilk and coat again in the flour mixture.
  6. Deep-fry in hot oil till evenly done all around. Drain on absorbent paper.

  8. Serve chicken hot with parsley-cream.
