Add salt, buttermilk and set aside for two to three hours. Mix together refined flour, Cajun spice, garlic powder, onion powder, pepper powder, cayenne powder, paprika and salt in a bowl. Strain the chicken pieces and reserve the buttermilk in the same bowl. Heat sufficient oil in a pan. Coat the chicken pieces in the flour mixture, dip in the buttermilk and coat again in the flour mixture. Deep-fry in hot oil till evenly done all around. Drain on absorbent paper.
