Soya Chunk Pulao

A healthy pulao – soya chunks and rice cooked together with some simple masalas. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Soya Chunk Pulao

  • 2 cups Soya bean chunks ,soaked in warm water for 1 hour
  • 1½ cups Rice soaked
  • 2 tablespoons Oil
  • ½ inch Cinnamon
  • 4-5 Cloves
  • 4-5 Black peppercorns
  • 2 Bay leaves
  • 2 tablespoons Ginger-garlic-green chilli paste
  • 2 medium Onions ,finely chopped
  • to taste Salt
  • 1 tablespoon Red chilli sauce

Method

  1. Heat oil in a non-stick wok. Add cinnamon, cloves, peppercorns and bay leaves and sauté for a minute.
  2. Add ginger-garlic-green chilli paste, mix and sauté. Add onions, mix and sauté till onions turn light golden or for 2 minutes.
  3. Add rice, mix and sauté on high heat for a minute. Add soya chunks, mix and sauté for a minute on low heat. Add salt and mix well.
  4. Boil 3 cups water in the microwave.
  5. Add boiled water to the wok, stir to mix, cover and cook for 5 minutes.
  6. Add chilli sauce, mix well, cover and cook for 5 minutes.
  7. Serve hot.
