With the recognition of being an important commercial pulse of the world, soya beans are coming into many kitchens around the world. Soya beans are said to control blood sugar levels, lower cholesterol, regulate the bowels and relieve constipation. Besides the popular tofu or beancurd, the beans are also fermented and used to make flavouring pastes and condiments, notably the Japanese soy sauce or shoyu and miso and the Indonesian tempeh.

Ingredients for Soya Kurma Recipe

  • Soya Nuggets 2 cups

  • Coconut grated 1/2 cup

  • Mustard seeds 1 teaspoon

  • Aniseeds (saunf) 1/2 teaspoon

  • Onion chopped 2 large

  • Tomato chopped 2 large

  • Turmeric powder 1/2 teaspoon

  • Salt to taste

  • Garam masala 1 teaspoon

  • Oil 1/4 cup

  • Fresh coriander leaves for garnish

  • Curry leaves a few

Method

Step 1

Soak Soya nuggets in hot water for 5 minutes. Drain and blend to a smooth paste. Heat oil in non stick pan, fry mustard seeds, aniseed and onions. Saute till light brown.

Step 2

Add chopped tomatoes, turmeric powder, salt and garam masala. When the oil separates add the soya paste. Add coconut and little water. Allow the mixture to boil. Garnish with coriander leaves and curry leaves and serve hot.
