Also called by names like aubergine and eggplant, this purple hued fleshy vegetable is a versatile thing and fun to cook with. Dish-up a very traditional bharta with it, bake a lasagna with parmesan and eggplant or just fry it for a great accompaniment with dal-chawal, brinjal is versatile. To choose one without seeds, pick the lighter one with a smooth shiny skin.

Ingredients for Spicy Baingan-Cook Smart Recipe

  • Long brinjals cut into dices 4-5

  • Oil 3 tablespoons

  • Mustard seeds 1/2 teaspoon

  • Garlic finely chopped 1 tablespoon

  • Curry leaves 10-12

  • Salt to taste

  • Green chillies chopped 2

  • Castor sugar 2 tablespoons

  • Malt vinegar 1 teaspoon

  • Paste

  • Cumin seeds 1 teaspoon

  • Mustard seeds 1 teaspoon

  • Dried red chillies 4-5

  • Ginger 1 inch

  • Garlic cloves 4-5

Method

Step 1

To make the paste, grind together cumin seeds, mustard seeds, red chillies, ginger and garlic with sufficient water into a smooth paste.

Step 2

Heat oil in a non-stick pan. Add mustard seeds and let them splutter.

Step 3

Add garlic and curry leaves and saute till fragrant. Add brinjal and toss to mix. Add salt and ground paste, mix well and cook for 2 minutes.

Step 4

Add green chillies and a little water, mix well, cover and cook on low heat till brinjals turn soft and pulpy and the oil separates from the masala.

Step 5

Add sugar and malt vinegar, mix well and cook for 2 minutes.

Step 6

Serve hot.
