Ingredients list for Sweetcorn Pasta - SK Khazana

  • 1 cup Whole wheat penne pasta boiled
  • 2 teaspoons Butter
  • 1 teaspoon Olive oil
  • 1 tablespoon Garlic finely chopped
  • 1 medium Red capsicum cut into ½ inch pieces
  • 1 medium Yellow capsicum cut into ½ inch pieces
  • 1 medium Green capsicum cut into ½ inch pieces
  • 2 tablespoon Tomato ketchup
  • 1/4 cup Broccoli cut into florets and blanched
  • 1/4 cup Sweet corn kernels
  • to taste Salt
  • 1/2 teaspoons Red chilli flakes
  • for garnish Black pepper powder
  • for garnish Fresh parsley sprig

Method

  1. Heat butter and olive oil in a non-stick wok, add garlic and sauté medium heat till it turns golden and its raw smell disappears.
  2. Add red capsicum, yellow capsicum and green capsicum, mix and sauté for 2-3 minutes. Add white sauce and tomato ketchup, mix well and cook for 1-2 minutes.
  3. Add pasta, mix well and cook for 2-3 minutes. Add broccoli, sweet corn kernels, salt and red chilli flakes, mix well and cook for 2-3 minutes on medium heat.
  4. Transfer into a serving bowl, garnish with black pepper powder and parsley sprig and serve hot.
