Ingredients list for Thai Vegetables In Lettuce Leaf

  • 8 leaves Iceberg lettuce
  • 1 medium Carrot
  • 2 medium Zucchinis thinly sliced
  • 1 medium Red capsicum thin strips
  • 8 Fresh button mushrooms thinly sliced
  • 1 cup Bean sprouts
  • to taste Salt
  • 1 teaspoon Sugar
  • 2 tablespoons Lemon juice
  • 1 tablespoon Light soy sauce
  • 1 teaspoon Sweet chilli sauce
  • 1/4 cup Roasted peanuts crushed
  • 8 Spring onions with greens diagonally sliced

Method

  1. Mix spring onions with greens, mushrooms, zucchini, red capsicum, carrot and bean sprouts in a bowl.
  2. Add salt, sugar, lemon juice, soy sauce, sweet chilli sauce and peanuts.
  3. Shape each iceberg lettuce leaf into a cup and arrange the salad in them.
  4. Serve immediately.
