Turai Gosht The unpopular vegetable turai when cooked with mutton will be well liked. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 21 Jul 2016 in Recipes Course New Update Main Ingredients Ridge gourd (turai), Mutton Cuisine Indian Course Main Course Mutton Prep Time 6-10 minutes Cook time 31-40 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Non Veg Ingredients list for Turai Gosht 1 medium Ridge gourd (turai) scraped and cut into 3-4 inch pieces 750 grams Mutton on bone, cut into 1 inch pieces 1 tablespoon Oil 1 teaspoon Cumin seeds 4-5 Black peppercorns 1 Black cardamom 3-4 Cloves 1 medium Onion finely chopped 1 tablespoon Ginger-garlic paste 1/4 teaspoon Turmeric powder 1 teaspoon Red chilli powder 1 teaspoon Coriander powder 1 inch Ginger sliced 1 large Tomato finely chopped to taste Salt 1 teaspoon Garam masala powder for garnishing Fresh mint sprigs for garnishing Green chilli paste Method Heat oil in a non-stick pressure cooker. Add cumin seeds, peppercorns, black cardamom and cloves and sauté till fragrant. Add onion and sauté till golden. Add ginger-garlic paste, mix and cook for a half a minute. Add turmeric powder, chilli powder, coriander powder and ginger and sauté for a minute. Add mutton, mix and cook for 2-3 minutes. Add tomato and salt, mix and cook till tomato turns pulpy. Halve ridge gourds and cut into medium pieces. Add garam masala powder and ridge gourd pieces in the cooker along with some water and mix well. Cover and pressure cook on medium heat for 5-6 whistles.
