By Sanjeev Kapoor 23 Mar 2021 in Recipes Course New Update Advertisment Main Ingredients Varai or samo, Ghee Cuisine Gujarati Course Snacks and Starters Prep Time 6-10 minutes Cook time 21-25 minutes Serve 4 Taste Tangy Level of Cooking Easy Others Veg Ingredients list for Varai ka Upma 1 1/2 cups Varai or samo 1-2 tablespoons Ghee 1 teaspoon Cumin seeds 2-3 Green chillies slit 2 sprigs Curry leaves to taste Rock salt (sendha namak) 2 teaspoons Ginger-green chilli paste 2 teaspoons Lemon juice to garnish Fresh coriander leaves chopped to garnish Fresh coconut scraped Method Heat ghee in deep non-stick pan, add cumin seeds and saute till their colour changes. Add green chillies, curry leaves and samo or varai, mix well and sauté lightly for 1-2 minutes. Add rock salt and ginger-green chilli paste and mix well. Add 3 cups warm water, mix well, cover and cook on low heat till varai is completely done. If necessary add a little more water so that the varai cooks well. Add lemon juice, mix well, cover and cook for 2-3 minutes.
