By Sanjeev Kapoor 23 Mar 2021 in Recipes Course New Update Main Ingredients Varai or samo, Ghee Cuisine Gujarati Course Snacks and Starters Prep Time 6-10 minutes Cook time 21-25 minutes Serve 4 Taste Tangy Level of Cooking Easy Others Veg Ingredients 1½ cups vari or sau 1-2 tablespoons ghee 1 teaspoon cumin seeds 2-3 green chillies 2 sprigs of curry leaves Sendha namak to taste 2 teaspoons ginger-green chilli paste 2 teaspoons lemon juice Chopped fresh coriander for garnish Scraped fresh coconut for garnish Method Heat a deep non-stick pan, add ghee heat it and add cumin seeds. Sauté till fragrant, add green chillies, curry leaves and sau or vari. Mix well and sauté lightly for 1-2 minutes. Add sendha salt, ginger-green chilli paste. Add 3 cups warm water, combine well. Cover and cook on low heat till vari cooks well. Add lemon juice. Mix well, cover and cook for a minute and switch off heat. Transfer upma in a serving bowl.
