Vegetable pulao A simple mixed vegetable pulao. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 28 Dec 2015 in Recipes Course New Update " frameborder="0" allowfullscreen> Main Ingredients Basmati rice, Cauliflower Cuisine Indian Course Rice Prep Time 6-10 minutes Cook time 11-15 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Vegetable pulao 2 cups Basmati rice boiled 1/2 medium Cauliflower separated into florets 1 medium Carrot chopped 6-8 French beans chopped to taste Salt 1/4 cup Green peas 2 teaspoons Clarified butter 2 Bay leaves 3-4 Green cardamoms 1 inch stick Cinnamon 3-4 Cloves 1 teaspoon Cumin seeds 7-8 Peppercorns Method Heat four to five cups water in a deep non stick pan. Add cauliflower, carrot, beans and salt. Stir to mix, cover and cook for minutes. Add green peas, cover and cook till vegetables are almost done. Heat ghee in another deep non stick pan. Add bay leaves, cardamoms, cinnamon, cloves and cumin seeds. Sauté till the seeds splutter. Add peppercorns and mix. Add boiled vegetables and mix. Add salt and rice and mix gently. Cover and cook for 2 minutes.
