Noteworthy changes in Italian cuisine happened with the discovery of the New World and the introduction of potatoes, tomatoes, bell peppers and maize, which are now an integral part of this cuisine.  Italian cuisine is known for its regional diversity each with a distinct taste.  This cuisine today is probably one of the most popular in the world.

Ingredients for Wholemeal Fresh Dough Thin Crust Pizza Recipe

  • Wholewheat flour 1 1/2 cups

  • Wheat bran 3 tablespoons

  • Soya flour 3 tablespoons

  • Fresh yeast 1 teaspoon

  • Salt 1 teaspoon

  • Sugar 1 teaspoon

  • Olive oil 3 tablespoons

  • FOR SAUCE

  • Olive oil 2 tablespoons

  • Onion chopped 1 medium

  • Garlic chopped 8 cloves

  • Tomato concasse 1 1/2 cups

  • Tomato puree 1/2 cup

  • Salt to taste

  • Black peppercorns freshly ground 1/2 teaspoon

  • Basil leaves 6-8

  • Fresh oregano 4 leaves

  • Dry oregano 1/4 teaspoon

  • TOPPING(FOR ONE 8 INCH PIZZA)

  • Onion cut into roundels 1 large

  • Corn niblets boiled 1/4 cup

  • Sundried tomatoes 2-3

  • Paneer (cottage cheese) cubed 50 grams

  • Mozzarella cheese grated 1 cup

  • Green capsicum cut into roundels 1/2 small

  • Red capsicum cut into roundels 1/2 small

  • Red capsicum cut into roundels 1/2 small

  • Black olives 5-6

Method

Step 1

Take whole meal flour in a bowl. Enrich it with wheat bran and soya flour. Dissolve sugar and salt in a little water. Dissolve separately yeast in a little warm water.

Step 2

Add the two solutions to the flour mixture and mix. Add one tablespoon of olive oil and mix. Add sufficient water to make a soft dough.

Step 3

Dab a little oil over the dough, cover with a wet muslin cloth and keep aside in a warm place for about forty-five minutes to ferment.

Step 4

Apply a little more oil and knead the dough to remove excess air and keep covered once again for half an hour.

Step 5

Preheat oven to 200°C.

Step 6

To make the pizza sauce, heat olive oil in a pan. Add chopped onion, chopped garlic, tomato concasse and sauté. Add tomato puree, salt and freshly ground pepper and stir. Add fresh basil torn with hands. Add fresh oregano and simmer for five minutes. Add

Dust the tabletop with a little flour. Roll out a portion of dough on the tabletop to form a thin roundel of approximately eight inch diameter.

Step 8

Grease a baking tray and place the pizza base on it. Prick with fork. Spread a portion of the pizza sauce over it. Place onion roundels, corn niblets, sun-dried tomatoes, paneer cubes, grated mozzarella cheese. Add the toppings on cheese again.

Step 9

Top with three coloured peppers, olives and some more mozzarella cheese.

Step 10

Bake in the preheated oven at 200°C for fifteen to twenty minutes or till done.

Step 11

Cut into slices and serve hot.
