Agri Kolambi Rassa

Agri recipes are known for being aromatic and spicy! This recipe is a great example of that. Fresh prawns (kolambi) marinated and slow cooked in a deliciously flavoured gravy (rassa), pairs beautifully with steamed rice or bhakris too!

Ingredients

  • 16-20 medium prawns (kolambi), peeled, cleaned, and deveined
  • 2 tablespoons agri masala
  • ¾ cup grated dried coconut
  • 3 tablespoons oil
  • 10-12 garlic cloves, coarsely crushed
  • 2 green chillies, coarsely crushed
  • 2 medium potatoes, par-boiled and quartered with the skin on
  • ½ teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • ½ teaspoon garam masala powder
  • Salt to taste
  • 1 tablespoon lemon juice
  • 2-3 tablespoons chopped fresh coriander leaves
  • Fresh coriander sprig for garnish
  • To serve
  • Rice bhakris, as required 
  • Onion wedges, as required
  • Green chillies

Method

  1. Dry roast dried coconut in a kadai till golden. Switch the heat off and set aside to cool. Transfer into a grinder jar and grind to a fine powder.
  2. Heat oil in a pan, add garlic and green chillies, mix and sauté till golden brown.
  3. Add potatoes, agri masala, turmeric powder, coriander powder and garam masala powder and mix well. 
  4. Add 2½ cups water and salt and mix, cook till it comes to a boil. 
  5. Add prawns and coconut powder and mix well. Cook on high heat for 5-6 minutes.
  6. Add lemon juice and coriander leaves and mix well. Let the mixture boil for 2 minutes. 
  7. Transfer the mixture into a serving bowl, garnish with coriander sprig and serve hot with rice bhakris¸ onion wedges and green chillies.
