Bihari Malpua

This malpua, a speciality of Bihar, is luscious and mouthwatering. Made with refined flour, semolina, milk, dried coconut, fennel seeds and sugar is easy to make. It is a great tea time snack or can be served as an after meal dessert.

Ingredients

  • 1 cup refined flour (maida)
  • 2 tablespoons semolina
  • 1½ tablespoons + ¾ cup sugar
  • 1 teaspoon coarsely crushed fennel seeds 
  • ¼ teaspoon green cardamom powder
  • ¼ cup full fat milk
  • 2 tablespoons grated dried coconut
  • Ghee for shallow frying
  • Slivered almonds for garnish
  • Blanched and slivered pistachios for garnish

Method

  1. Take refined flour in a bowl, add semolina, 1½ tablespoons sugar, fennel seeds, green cardamom powder and milk and mix well.
  2. Add ¾ cup water and mix well. Add dried coconut and mix. Set aside for 30 minutes.
  3. For syrup, heat a non-stick pan, add sugar and ½ cup water and mix well. Cook till the syrup reaches 1 string consistency. Set aside.
  4. Heat sufficient ghee in wide shallow pan. Pour small ladles full of batter keeping some distance from each and shallow fry, on both sides, till evenly golden brown and crisp.
  5. Drain and soak in warm sugar syrup for 15-20 minutes.
  6. Drain and transfer onto a serving plate, sprinkle almonds, pistachios and serve.
