Green Garlic Chutney

Green garlic also known as spring garlic, is basically garlic which hasn't grown fully. It is pulled out from the ground before it starts forming the cloves and has a small blub. It is available during the winter months and has a strong flavour. Here we have for you a chutney made with this garlic which is sure to entice you to ask for more. Goes very well with bhakri.

Green Garlic Chutney

Main ingredients Green garlic bulbs with stalks, Oil, Raw peanuts, Dried coconut, Sea salt, Kashmiri red chilli powder

Ingredients

  • ¾ cup chopped green garlic bulbs
  • ¾ cup chopped green garlic stalks
  • 2 tablespoons oil
  • ½ cup raw peanuts
  • 100 grams dried coconut, sliced
  • Sea salt to taste
  • 1½ tablespoons Kashmiri red chilli powder 
  • Bhakri for serving

Method

  1. Heat oil in a kadai, add the raw peanuts and sauté till they turn golden brown.
  2. Add green garlic bulbs, mix and sauté for 1 minute.
  3. Add dried coconut, mix and sauté for 3-4 minutes. Add green garlic stalks and sea salt, mix and sauté for 2-3 minutes. Transfer the mixture onto a plate and allow to cool.
  4. Transfer the mixture into a blender jar, add red chilli powder and grind coarsely.
  5. Serve with bhakri.
