Ingredients

  • 1½ cups garlic cloves (lehsun)
  • 3 tablespoons oil + for deep frying
  • 1½ teaspoons cumin seeds
  • 2 medium onions, chopped
  • Salt to taste
  • 2-3 green chillies, chopped
  • 2 medium tomatoes, chopped
  • ¼ teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 2 teaspoons coriander powder
  • ½ teaspoon garam masala powder
  • ¼ cup yogurt
  • 2-3 tablespoons chopped fresh coriander leaves
  • ½ lemon
  • Fresh coriander sprig for garnish
  • Paranthas for serving

Method

  1. Heat sufficient oil in a kadai, add garlic cloves and deep-fry till golden brown. Drain on absorbent paper.
  2. Heat 3 tablespoons oil on a tawa. Add cumin seeds and once they start to change the colour, add onions, salt and sauté till golden brown.
  3. Add green chillies, tomatoes and cook till the tomatoes are pulpy.
  4. Add turmeric powder, red chilli powder, coriander powder, garam masala powder and mix well.
  5. Add yogurt and sauté for 2 minutes. Add 1 cup water and mix well.
  6. Add fried garlic cloves, coriander leaves and mix well. Squeeze lemon and mix well.
  7. Transfer on a serving plate, garnish with coriander sprig and serve hot with paranthas.
