By Sanjeev Kapoor 22 Apr 2024 in Recipes Main Course Egg New Update Madras Egg Bhurji Main ingredients Eggs, Madras curry powder, Cumin seeds, Green chillies, Onions, Curry leaves, Tomatoes Cuisine South Indian Course Main course eggs Prep time 10-15 minutes Cook time 15-20 minutes Serve 4 Taste Savoury Level of cooking Easy Others Non veg Ingredients 8 eggs 1½ teaspoons Madras curry powder 2 tablespoons oil 1 teaspoon cumin seeds 2 green chillies, chopped 2 medium onions, chopped Salt to taste 10-15 curry leaves 2 medium tomatoes, chopped ¼ teaspoon turmeric powder 1½ teaspoons red chilli powder Crushed black peppercorns to taste 2-3 tablespoons chopped fresh coriander leaves Chapatti for serving Method Heat oil in an earthenware pot, add cumin seeds and once they start to change colour, add green chillies and mix well. Add onions and salt, mix and sauté till golden brown. Add curry leaves and mix well. Add tomatoes, mix and saute on medium heat for 4-5 minutes or till tomatoes become pulpy. Add turmeric powder, red chilli powder and Madras curry powder and mix well. Break eggs directly into the pan and mix well. Cook for 4-5 minutes. Add crushed black peppercorns and coriander leaves and mix well.
