Malai Ki Sabzi

The name might sound confusing, but this dish is here to make you wanting for more! Fresh malai / cream, sauteed with spices to make a delicious, lip smacking sabzi that goes perfectly with paranthas or naans or even rice!

Ingredients

  • 350 grams fresh malai
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 tablespoon chopped garlic
  • ½ tablespoon chopped ginger
  • 2 green chillies, chopped
  • 1 large onion, finely chopped
  • 1 large tomato, finely chopped
  • Salt to taste
  • 1 teaspoon sugar
  • 1 teaspoon red chilli powder
  • 1 tablespoon coriander powder
  • 1 teaspoon cumin powder
  • ½ teaspoon turmeric powder
  • ½ teaspoon garam masala powder
  • ¼ teaspoon roasted dried fenugreek leaves (kasuri methi) powder
  • 2-3 tablespoons chopped fresh coriander leaves
  • Fresh coriander sprig for garnish
  • Paranthe to serve

Method

  1. Heat oil in a non-stick pan, add cumin seeds and let them change colour.
  2. Add garlic, ginger and green chillies, mix and sauté for 1 minute. Add onion, mix and saute till it turns golden brown.
  3. Add tomato, salt and sugar, mix well and saute till it turns soft and pulpy.
  4. Add red chilli powder, coriander powder, cumin powder and turmeric powder, mix well and saute for 1 minute.
  5. Add fresh malai and mix well. Cook for 1-2 minutes. 
  6. Add garam masala powder, roasted dried fenugreek leaves powder and coriander leaves and mix well. 
  7. Take the pan off the heat and transfer the mixture into a serving bowl. Garnish with coriander sprig and serve hot with paranthe.
