Noodles Lo Mein Style

Lo mein is a traditional Chinese dish made with noodles. It contains vegetables and some type of meat or seafood, like beef, chicken, pork or shrimp. It may be served with wontons or it can be eaten with just vegetables. The term lo mein comes from the Cantonese which means stirred noodles.

Ingredients

  • 300 grams noodles, boiled
  • 200 grams boneless chicken breast
  • 4 tablespoons corn flour
  • 4 teaspoons dark soy sauce
  • 2 tablespoons oyster sauce
  • 2 cups chicken stock
  • 4 teaspoons sesame oil
  • 2 tablespoons oil
  • 2 tablespoons chopped garlic
  • 1 inch ginger, cut into strips
  • 1 large carrot, peeled and cut into thick strips
  • 6-8 pak choy pieces, roughly chopped
  • Salt to taste
  • Chopped spring onion greens for garnish

Method

  1. Cut chicken breast into small pieces.
  2. Take corn flour in a bowl, add dark soy sauce, oyster sauce and chicken stock and mix well. Add sesame oil and mix.
  3. Heat oil in a non-stick wok, add garlic and ginger, mix and sauté till garlic turns golden brown.
  4. Add chicken and sauté on high heat for 3-4 minutes.
  5. Add carrot and pak choy and mix. Add noodles and salt and toss well.
  6. Add the prepared sauce mixture and mix well. Cook on medium heat for 4-5 minutes or until the sauce thickens. 
  7. Transfer into a serving plate, garnish with spring onion greens and serve hot.
