Ingredient

  • ¼ cup creamy peanut butter
  • 300 grams boiled noodles
  • ½ teaspoon dark soy sauce
  • 1 teaspoon red chilli sauce
  • Crushed black peppercorns to taste
  • Salt to taste
  • ½ teaspoon corn flour
  • 2 tablespoons oil
  • 2 spring onion bulbs, diagonally sliced
  • 1 tablespoon finely chopped ginger
  • 1 tablespoon finely chopped garlic
  • 1 small red capsicum, cut into thin strips
  • 1 small green capsicum, cut into thin strips
  • 1 small carrot, cut into thin strips
  • Diagonally sliced spring onion greens for garnish
  • Diagonally sliced fresh red chillies for garnish

Method

  1. Take peanut butter in a bowl, add dark soy sauce, red chilli sauce, crushed black peppercorns, salt, corn flour and 2 tablespoons water and whisk till smooth.   
  2. Heat oil in a non-stick wok, add spring onion bulbs, ginger and garlic, mix and sauté on high heat for 1-2 minutes.
  3. Add red capsicum, green capsicum and carrot, mix well and sauté for 1-2 minutes. Add boiled noodles and toss well.
  4. Add peanut butter mixture and 2 tablespoons water and mix well. 
  5. Transfer the noodles into a serving bowl, garnish with spring onion greens and fresh red chillies. Serve hot.
