Spicy Chicken Noodles

Chicken mince cooked with some aromatics to make a spicy gravy and served on pad thai noodles. A comfort food for all times.

Ingredients

  • 400 grams chicken mince
  • 200 grams Pad Thai noodles, boiled and drained
  • 1½ tablespoons oil
  • 1½ tablespoons finely chopped garlic
  • ½ tablespoon finely chopped ginger
  • 2 fresh red chillies, diagonally sliced
  • 3 spring onion bulbs, finely chopped
  • 2-3 tablespoons red chilli paste
  • Salt to taste 
  • Crushed black peppercorn
  • 1 star anise
  • 2-3 teaspoon brown sugar
  • 1 teaspoon soy sauce
  • 1 teaspoon red chilli sauce
  • 2 tablespoons chopped spring onion greens
  • 2 teaspoons cornflour slurry
  • 1 teaspoon vinegar
  • 1 teaspoon sesame oil
  • Toasted white sesame seeds, for garnish
  • Toasted black sesame seeds, garnish

Method 

  1. Heat oil in a non-stick wok, add garlic, ginger, fresh red chillies and spring onion bulbs, mix and sauté on high for 1 minute. Add chicken mince, mix and sauté on high heat for 3-4 minutes.
  2. Add red chilli paste, mix and sauté for 1-2 minutes. Add salt, crushed black pepper corn, star anise and brown sugar, mix well and saute for 1-2 minutes. 
  3. Add soy sauce, red chilli sauce and 1 tablespoon spring onion greens and mix well. Add ¾ cup water, mix and cook for 6-8 minutes.
  4. Add cornflour slurry, mix well and cook till the mixture thickens. Add vinegar and sesame oil and mix well. 
  5. Arrange the boiled pad Thai noodles on serving plate and pour the chicken mixture over it, garnish with remaining spring onion greens, toasted white sesame seeds and toasted black sesame seeds. Serve hot.
