Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Achari Paneer Rice Recipe

  • Lemon pickle 2 tablespoons

  • Paneer (cottage cheese) cut into small cubes 200 grams

  • Rice 3 cups

  • Oil 1 tablespoon

  • Cumin seeds 1 teaspoon

  • Bay leaves 2

  • Black peppercorns 7-8

  • Salt to taste

  • Green capsicum finely chopped ½ medium

  • Red capsicum finely chopped ½ medium

  • Yellow capsicum finely chopped ½ medium

  • Fresh coriander sprigs for garnishing


Step 1

Heat oil in a non-stick pan. Add cumin seeds and sauté for half a minute. Add bay leaves and peppercorns and mix.

Step 2

Add lemon pickle, mix and sauté. Add salt, rice, green, red, yellow capsicums and cottage cheese cubes and toss well. Cover and cook on low heat for 2-3 minutes.

Step 3

Garnish with coriander sprig and serve hot.
