Why is it that when you are stuck at “what should we cook today” the answer is always “make some aloo!” Potatoes are like this…extremely popular and have multipurpose usage.

And did you always think that eating a potato will make you fat?
Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Aloo Wadiyan - SK Khazana Recipe

  • Potatoes peeled 3 medium

  • Urad dal wadis 5-6

  • Oil 4 tablespoons

  • Ginger finely chopped 1 teaspoon

  • Onion finely chopped 1 large

  • Fresh tomato puree 1 cup

  • Red chilli powder 1 teaspoon

  • Coriander powder 1 tablespoon

  • Turmeric powder 1/4 teaspoon

  • Garam masala powder 1/2 teaspoon

  • Salt to taste

  • Fresh coriander leaves chopped 3 tablespoons

  • Fresh coriander sprigs for garnish

Method

Step 1

Cut the potatoes in wedges and set aside. Lightly crush the wadis in a mortar and pestle.

Step 2

Heat oil in a pressure cooker, add the wadis and saute till golden brown. Drain on absorbent paper.

Step 3

Add ginger to the oil remaining in the cooker and saute for a few seconds.

Step 4

Add onion, mix well and saute till golden brown. Add tomato puree, mix well and saute for 3-4 minutes or till oil separates.

Step 5

Add red chilli powder, coriander powder, turmeric powder and garam masala powder, mix well and saute for 1 minute.

Step 6

Add ½ cup water and mix. Add potato wedges, fried wadis, salt and coriander leaves and mix well.

Step 7

Add ½ cup water, mix well, cover the cooker and cook under pressure till 3-4 whistles are released.

Step 8

Open the lid of the cooker once the pressure reduces completely.

Step 9

Transfer into a serving bowl, garnish with coriander sprig and serve hot.
