You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Anda Chilli - SK Khazana Recipe

  • Eggs hard boiled 6-8

  • Green chillies slit 3-4

  • Fresh red chillies slit 2-3

  • Corn flour 1/4 cup

  • Refined flour 1/2 cup

  • Crushed black pepper corns to taste

  • Salt to taste

  • Oil 1 tablespoon + to deep fry

  • Garlic finely chopped 1 tablespoon

  • Ginger finely chopped 1 inch

  • Onion diced and layers separated 1 small

  • Green capsicum diced 1 small

  • Yellow capsicum diced 1 small

  • Red capsicum diced 1 small

  • Red chilli sauce 1 tablespoon

  • Oyster sauce 1 tablespoon

  • Spring onion greens chopped 2 tablespoons

  • Spring onion green curls for garnish

Method

Step 1

Take corn flour in a bowl, add refined flour, crushed black peppercorns, salt and ½ cup water and mix till a smooth batter is formed.

Step 2

Heat sufficient oil in a kadai.

Step 3

Dip each egg halves in the batter and slide into the hot oil. Deep fry the eggs till golden and crisp. Drain on absorbent paper.

Step 4

To make the sauce, heat oil in a non-stick pan. Add garlic, ginger, green chillies and fresh red chillies and saute for 1-2 minutes.

Step 5

Add onion, green capsicum, yellow capsicum and red capsicum and mix and saute for 1-2 minutes on high heat.

Step 6

Add red chilli sauce and oyster sauce and mix well. Pour ¼ cup water, mix and cook for 1-2 minutes.

Step 7

Add fried eggs and adjust salt and mix till each egg is coated with the sauce. Add spring onion greens, mix and take the pan off the heat.

Step 8

Transfer anda chilli in a serving bowl and garnish with spring onion green curls and serve hot.
