The best thing about this grain is its versatility – by adding a bunch of veggies, fragrant spices, dals or meats you can create a number of rice based dishes that blow your mind and can rarely go wrong. Rice can also be used to make rice flour, flaked rice and puffed rice, for use in sweets like puddings, cakes and as a thickening agent for sauces, soups and stews. As the chief ingredient in fermented drinks, rice makes some very potent Chinese spirits and the famous Japanese sake.

Ingredients for Bahala Bhath Recipe

  • Yogurt 1 cup

  • Cooked rice 2 cups

  • Salt to taste

  • Oil 2 tablespoons

  • Mustard seeds 1 teaspoon

  • Dried red chilli 1

  • Split black gram skinless (dhuli urad dal) 1 teaspoon

  • Ginger chopped 1/2 teaspoon

  • Green chilli chopped 1

  • Curry leaves 4-6

  • Asafoetida a pinch

  • Chilled Milk 1/2 cup

  • Cucumber peeled and chopped 1/2 cup

  • Raw mango chopped 2 tablespoons

  • Fresh coriander leaves chopped 1 tablespoon

  • Green grapes halved 10-12

Method

Step 1

Add salt to the rice and mix, mashing it well. Heat oil in a small pan. Add mustard seeds and let them splutter.

Step 2

Add red chillies, urad dal, ginger, green chilli, curry leaves and asafoetida. Add this tempering to the rice and mix well. Add yogurt and mix. Add chilled milk and continue to mix.

Step 3

Add cucumber, raw mango and grapes and mix well. Chill in a refrigerator. Garnish with coriander leaves and serve.
