Ingredients 

  • 450 grams red pumpkin (bhopla/kaddu),peeled
  • 3 medium onions
  • 10-15 garlic cloves
  • 1 inch ginger
  • 5-6 green chillies
  • 2 bay leaves
  • 7-8 black peppercorns
  • 1/2 teaspoon cumin seeds
  • 1 tablespoon coriander powder
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon dried mango powder
  • 1/2 teaspoon roasted cumin powder 
  • Salt to taste
  • 2 tablespoons lemon juice
  • 2 tablespoons oil

Method

  1. Cut pumpkin into small cubes and put into a bowl. Cut onions into small cubes.
  2. Put garlic cloves, ginger and green chillies in a chopper and chop finely.
  3. Take a rectangular ovenproof glass dish and put pumpkin and onion cubes in it. Put the chopped garlic-ginger-green chillies over it.
  4. Add bay leaves, black peppercorns, cumin seeds, coriander powder, turmeric powder, garam masala powder, dried mango powder, cumin powder, salt, lemon juice and oil and mix well with two spoons.
  5. Cook in the oven at 220° C for 8-10 minutes. Reduce the temperature to 180° C and cook for 8-10 minutes more.
  6. Take it out of the oven and serve hot.
