Ingredients for Bean Vegetable Rice Recipe

  • Baked beans 1 cup

  • Carrot peeled and cut into ½ inch cubes 1 medium

  • Green capsicum cut into½ inch pieces 1 medium

  • Button mushrooms sliced 6-8

  • Cooked rice 3 cups

  • Butter 2 tablespoons

  • Garlic chopped 1 tablespoon

  • Onion finely chopped 1 medium

  • Salt to taste

  • Cumin powder ½ teaspoon

  • Red chilli powder 1½ teaspoons

  • Processed cheese grated, ¼ cup + For topping

  • Pickled jalapenos sliced 2

  • Salad mixed vegetable to serve


Step 1

Heat butter in a non-stick pan. Add garlic and sauté till golden. Add onion and sauté till golden.

Step 2

Add carrot and sauté for 1 minute. Add 2-3 tablespoons water, mix, cover and cook on low heat for 2 minutes.

Step 3

Add capsicum and mushrooms, mix and cook for 1-2 minutes. Add baked beans and mix well.

Step 4

Add salt, cumin powder and chilli powder, mix and cook for 1 minute. Add cooked rice, lightly mix and cook on low heat for 5 minutes.

Step 5

Add cheese and mix. Add jalapenos and mix well.

Step 6

Top with some cheese and serve hot with mixed vegetable salad.
