Ingredients for Brown Stew Recipe

  • Butter 2 tablespoons

  • Potatoes peeled and cut into cubes 2 medium

  • Onions sliced 3 medium

  • Cinnamon 1 medium

  • Cloves 4-5

  • Black peppercorns 8-10

  • Cauliflower florets 12-15

  • Carrot peeled and cut into cubes 1 medium

  • French beans long pieces 1 cup

  • Green peas 1 cup

  • Button onions 10-12

  • Refined flour (maida) 2 tablespoons

  • Salt to taste

  • Tomatoes finely chopped 2 medium

  • Worcestershire sauce 3 tablespoons


Step 1

Heat butter in a deep non-stick pan. Add onions and sauté till well-browned.

Step 2

Add cinnamon, cloves and peppercorns and mix well. Add potatoes, cauliflower, carrot, beans and green peas. Mix well and cook on high heat for 1 minute.

Step 3

Add button onions, mix again and add 3 cups water. Mix, cover and cook on high heat till it comes to a boil.

Step 4

Remove cover, mix well, cover and simmer for 6-8 minutes or till vegetables are tender.

Step 5

Mix refined flour with ½ cup water well ensuring that there are no lumps. Add this to the pan and mix. Add 1½ cups water and mix again.

Step 6

Add salt, tomatoes and mix well. Add Worcestershire sauce and mix well. Simmer for 5 minutes.

Step 7

Serve hot.
