Till a few years ago, cauliflower used to be a vegetable that is only available during winter but of late cauliflower is available year around especially in big cities. Referred to as the aristocrat of the cabbage family, the flowers are also eaten raw at times. While buying, look for fresh cauliflowers with compact white heads and green fresh looking leaves. Avoid and reject any loose or spread out heads – they are a sure sign of over maturity.

Ingredients for Cauliflower Rice - SK Khazana Recipe

  • Cauliflower cut into florets 1 large

  • Olive oil 2 tablespoons

  • Garlic finely chopped 1 1/2 tablespoons

  • Spring onion greens finely chopped 3-4

  • French beans finely chopped 7-8

  • Carrot peeled and finely chopped 1 medium

  • Red capsicum finely chopped 1/2 small

  • Yellow capsicum finely chopped 1/2 small

  • Soy sauce 1/2 tablespoon

  • Crushed black peppercorns to taste

  • Salt to taste

  • Vegetable stock 3 cups

  • Vinegar 3 teaspoons

  • Spring onion greens chopped 2-3

  • Spring onion greens sliced for garnish


Step 1

Put the cauliflower florets in a food processor and chop them coarsely.

Step 2

Heat olive oil in a non-stick wok, add garlic and sauté till raw smell disappears. Add spring onion bulbs, mix well and sauté till translucent.

Step 3

Add French beans and carrot, mix well and sauté for 1-2 minutes.

Step 4

Add red capsicum and yellow capsicum , mix well and sauté for for 2-3 minutes.

Step 5

Add the cauliflower, soy sauce, crushed black peppercorns and salt and mix s well.

Step 6

Add vegetable stock and mix well. Cover and cook for 2-3 minutes.

Step 7

Add vinegar and mix well. Add chopped spring onion greens, toss well and take it off the heat.

Step 8

Transfer into a servring bowl, garnish with sliced spring onion greens and serve hot.
