Ever wondered why the phrase “say cheese” is used just before a photograph is clicked? Simply because ‘cheese’ makes one smile! Not only the word but cheese as a food makes a lot of palates happy. It is an inexpensive, versatile and nourishing food. We have our very own Indian version as well as the ones made from soy milk that are even healthier. Whichever form, this is one food that is loved by one and all!

Ingredients for Cheesy Pav Bhaji Recipe

  • Processed cheese , grated 2 tablespo for topping

  • Raw bananas boiled, peeled and grated 1/2 cup

  • Pav bhaji masala 2½ teaspoo tablespoon

  • Brown pavs 4

  • Oil 1 tablespoon

  • Cumin seeds 1 teaspoon

  • Green capsicum , finely chopped 1 medium

  • Fresh coriander leaves , chopped 3/4 cup + for garnish

  • Turmeric powder 1/4 teaspoon

  • Red chilli powder 1 1/2 teas tablespoon

  • Garam masala powder 1 teaspoon

  • Salt to taste

  • Green peas , boiled 1/2 cup

  • Tomatoes , finely chopped 3-4 medium

  • Butter 1 tablespoon


Step 1

Heat oil in a deep non-stick pan, add cumin seeds and when it changes colour, add capsicum and sauté for 2 minutes.

Step 2

Add ½ cup coriander leaves, raw banana, turmeric powder, 1 teaspoon red chilli powder, ½ teaspoon garam masala powder, 2 teaspoons pav bhaji masala and salt, mix well and cook for 1-2 minutes.

Step 3

Add green peas and tomatoes and mix well. Cover and cook for 5-10 minutes.

Step 4

To prepare masala, mix together 1 tablespoon red chilli powder, 1 teaspoon pav bhaji masala and 1-2 pinches salt in a bowl.

Step 5

Blend the cooked tomato mixture with an electric hand blender into coarse mixture.

Step 6

Add butter, ½ teaspoon red chilli powder, ½ teaspoon garam masala powder and ½ teaspoon pav bhaji masala and mix well, cover and cook for 5 minutes. Add 2 tablespoons cheese, mix, cover and cook for 1 minute.

Step 7

Transfer pav bhaji into a serving bowl, top with some cheese and garnish with a coriander sprig.

Step 8

To prepare masala pav, slit each brown pav in the middle without cutting through.

Step 9

Heat some butter on a non-stick tawa. Put some masala mixture and mix. Put 1 teaspoon coriander leaves and mix. Open the slit pav and place over the masala mixture and toast from both sides till well coated. Place on a serving platter.

Step 10

Make more masala pavs in the same way.

Step 11

Serve the bhaji hot with masala pav.
