Ingredients list for Chicken Mazedar

  • 750 grams Chicken cut into small pieces on the bone
  • 5 tablespoons Oil
  • 1 Bay leaf
  • 8-10 Cloves
  • 1 inch stick Cinnamon
  • 8-10 Green cardamoms
  • 2 Black cardamoms
  • 6 medium Onions sliced
  • 2 tablespoons Ginger-garlic paste
  • 1 teaspoon Red chilli powder
  • 1/2 teaspoon Turmeric powder
  • 1 tablespoon Coriander powder
  • 1 cup Tomato puree
  • to taste Salt
  • 1 teaspoon Garam masala powder
  • 2 tablespoons Sweet date and tamarind chutney

Method

  1. Heat oil in a non stick pan, add bay leaf, cloves, cinnamon, green cardamoms and black cardamoms and sauté till fragrant.
  2. Add onion and sauté till golden brown.
  3. Add chicken pieces, mix well and saute for two minutes.
  4. Add ginger-garlic paste, red chilli powder, turmeric powder and coriander powder.
  5. Mix well and saute for a few minutes.Add tomato puree and cook for a few minutes.
  6. Add two and a half cups of water, salt, garam masala powder and tamarind-date chutney.
  7. Mix well, cover and cook till the chicken is done. Serve hot.
