Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chicken Rara Recipe

  • Boneless chicken cut into 2 inch pieces 500 grams

  • Chicken mince 1/2 cup

  • Cloves 10-12

  • Cumin seeds 1 teaspoon

  • Green cardamoms 5-6

  • Mace 2 blade

  • Yogurt 1/2 cup

  • Nutmeg powder 1/2 teaspoon

  • Salt to taste

  • Oil 3-4 tablespoons

  • Medium onions finely chopped 3

  • Ginger-garlic paste 1 tablespoon

  • Medium tomatoes chopped 2

  • Red chilli powder 1 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Coriander powder 1 teaspoon

  • Green chillies slit 2

  • Fresh coriander leaves chopped 1 tablespo to garnish

Method

Step 1

Heat a non-stick pan, add cloves, cumin seeds, cardamoms and mace and dry roast till fragrant. Remove from heat, cool and grind to a fine powder.

Step 2

Take yogurt in a bowl, add 1 tablespoon prepared spice powder, nutmeg powder and salt and mix well. Add chicken pieces, mix well and refrigerate to marinate for 1-2 hours.

Step 3

Heat 3 tablespoons oil in a pressure cooker, add onions and sauté till lightly browned. Add ginger-garlic paste, mix and sauté till the raw smells disappear. Add marinated chicken, mix and cook for 2-3 minutes.

Step 4

Add tomatoes, mix and cook till they turn soft and pulpy. Add red chilli powder, turmeric powder and coriander powder, mix and cook till the oil separates.

Step 5

Add chicken mince and mix. Add green chillies, mix and cook for a minute. Add 2 cups water, stir, cover and cook till the pressure is released for 2-3 times. Add coriander leaves and mix well.

Step 6

Transfer into a serving bowl, garnish with coriander leaves and serve hot.
