Ingredients list for Clams Masala

  • ½ cup Clams opened and flesh sifted to one shell
  • ¼ cup Fresh coconut
  • 4 tablespoons Oil
  • 4-5 Cloves
  • 4-5 Black peppercorns
  • 1 inch Cinnamon
  • 1 teaspoon Coriander seeds
  • 1 teaspoon White sesame seeds
  • 1 medium Onion finely chopped
  • ¼ cup Dried coconut ( khopra) grated
  • 1 tablespoon Ginger-garlic paste
  • to taste Salt
  • 1 teaspoon Red chilli powder
  • ½ teaspoon Turmeric powder
  • 1 teaspoon Garam masala powder
  • ½ teaspoon Tamarind paste

Method

  1. Heat 2 tablespoons oil in a non-stick pan. Add cloves, peppercorns, cinnamon, coriander seeds, sesame seeds and sauté till fragrant.
  2. Add half the onion and sauté for 2-3 minutes or till golden. Add fresh coconut and sauté for 2-3 minutes or till golden.
  3. Add dried coconut and sauté for 2-3 minutes or till golden. Remove from heat and set aside to cool.
  4. Heat remaining oil in a non-stick wok. Add ginger-garlic paste and sauté for a half minute. Add remaining onion and sauté till translucent.
  5. Add clams and mix well. Add salt, chilli powder, turmeric powder and garam masala powder and mix well. Add ½ cup water, mix, cover and cook on low heat for 5 minutes.
  6. Grind the roasted spice-coconut mixture with tamarind paste and some water to a fine paste.
  7. When the clam masala turns pink, add the masala paste to the pan, mix well, cover and cook for 4-5 minutes.
  8. Serve hot garnished with a coriander sprig.
