Ingredients list for Coconut Rice

  • 1 cup Scraped coconut
  • 2 cups Cooked rice cooled
  • 2-3 tablespoons Oil
  • 1/2 teaspoon Mustard seeds
  • 2 Dried red chillies,broken
  • 1 teaspoon Split black gram skinless (dhuli urad dal)
  • 6-8 Curry leaves
  • 1 inch piece Ginger,chopped
  • 1 Green chilli,broken
  • 1/4 cup Peanuts,deep fried
  • to taste Salt
  • 2-3 tablespoons Fresh coriander leaves

Method

  1. Heat oil in a non-stick pan. Add mustard seeds and let them splutter. Add red chillies, urad dal and sauté till the dal turns light brown. Add curry leaves, ginger and green chilli.
  2. Mix and add coconut and sauté for a while on low heat. Add peanuts and mix. Add rice and mix lightly. Add salt and mix lightly. Add coriander leaves and mix. Serve with sambhar.
