Ingredients list for Country Captain Chicken

  • 1 kilogram Chicken cut into pieces
  • 1 tablespoon Oil
  • 3 large Onions sliced
  • 2 inch sticks Cinnamon
  • 4 Cloves
  • 2 Green cardamoms
  • 2 Dry red chilies broken
  • 6-8 Black peppercorns
  • 2 tablespoons Garlic paste
  • 2 teaspoons Red chilli powder
  • 1 teaspoon Turmeric powder
  • to taste Salt

Method

  1. Heat oil in a non stick pan. Add onions, cinnamon, cloves, cardamom, red chillies and peppercorns and sauté lightly.
  2. Add the chicken, garlic paste and sauté on medium heat for 5 minutes.
  3. Add the red chilli powder, turmeric powder and salt. Mix well and cook for a few minutes.
  4. Add ½ cup water and cook till the chicken is tender and the gravy is quite thick.
  5. Serve hot.
