Ingredients list for Cuppa Fried Rice - AK Khazana

  • 3 cups Rice cooked
  • 2 tablespoons Oil
  • 5-6 French beans finely chopped
  • 4-5 Baby corn chopped
  • 3 tablespoons Green capsicum finely chopped
  • 2 tablespoons Red capsicum finely chopped
  • 2 tablespoons Yellow capsicum finely chopped
  • 4 tablespoons Cabbage finely chopped
  • 2-3 tablespoons Corn kernels boiled
  • to taste Salt
  • 2 pinches Sugar
  • 1/2 teaspoon Dried ginger powder (sonth)
  • to taste Black pepper powder
  • 3 teaspoons Soy sauce
  • 2 teaspoons Green chilli sauce
  • 2 teaspoons Vinegar
  • 1 1/2 tablespoons Cornflour
  • 2 Green chillies finely chopped
  • 250 grams Cottage cheese cut into medium cubes and deep-fried
  • 1 tablespoon Fresh coriander leaves finely chopped

Method

  1. Heat 1 tablespoon oil in a non-stick pan. Add French beans, baby corn, 2 tbsps green capsicum, red capsicum, yellow capsicum, cabbage and sweet corn kernels and mix well. Sauté for 1-2 minutes.
  2. Add salt, a pinch of sugar, ¼ tsp dried ginger powder, pepper powder, rice, 2 tsps soy sauce, 1 tsp green chilli sauce and 1 tsp vinegar and toss well. Remove from heat and set aside.
  3. Heat remaining oil in another non-stick pan.
  4. Mix together cornflour and ½ cup water in a bowl. Add salt, remaining sugar, pepper powder and remaining dried ginger powder and mix well.
  5. Add green chillies to the second pan and sauté for a few seconds. Add remaining green capsicum and sauté for 30 seconds.
  6. Add the cornflour mixture and mix well. Add remaining soy sauce, remaining green chilli sauce and remaining vinegar and mix well.
  7. Add fried cottage cheese cubes, mix well and cook for 4-5 minutes. Add coriander leaves and mix.
  8. Put some fried rice into serving cups, top with some paneer chilli and repeat these layers till the cups are full. Place the cups in the microwave oven and cook for 5 minutes.
  9. Serve hot.
