Ingredients list for Dhapate

  • 1 cup Sorghum (jowar) flour
  • 1/2 cup Rice flour
  • 1/4 cup Whole wheat flour
  • 1/4 cup Gram flour
  • to taste Salt
  • 1/4 teaspoon Turmeric powder
  • 1 tablespoon Garlic finely chopped
  • 1 Medium onion finely chopped
  • 1 1/2 tablespoons Green paste (2 green chillies, 1 tsp cumin seeds and a handful
  • 1/2 cup + to serve Yogurt
  • 1/4 cup Fresh coriander leaves chopped
  • as required Oil
  • for platin Banana leaves

Method

  1. Take sorghum flour in a mixing bowl, add rice flour, wheat flour, gram flour, salt, turmeric powder, garlic, onion, green paste, yogurt and coriander leaves and mix well. Add a little water and knead into a soft dough.
  2. Heat a non-stick tawa.
  3. Divide the dough into equal large lemon sized portions. Place a plastic sheet on the worktop, drizzle a little oil over and spread, place each dough ball on it, dampen your hand with water and gently tap the dough to flatten it into a thick roundel.
  4. Place the roundel on the hot tawa and cook for 1 minute. Flip and drizzle a little oil all around and flip again. Drizzle a little oil on the other side too and cook for 5-6 minutes over medium heat till golden brown specs appear on both sides.
  5. Transfer prepared dhapates on a banana leaf lined serving plate and serve hot with yogurt.
