You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Egg Pulusu Recipe

  • Eggs boiled and peeled 6

  • Curry Leaves 5 tablespoons

  • Turmeric powder 1/2 teaspoon

  • Fenugreek seeds (methi dana) a pinch

  • Mustard seeds 1/4 teaspoon

  • Dried red chillies broken 1 to taste

  • Curry leaves 10-12

  • Onions chopped 2 medium

  • Ginger-garlic paste 1 tablespoon

  • Coriander powder 1 tablespoon

  • Cumin powder 1 teaspoon

  • Red chilli powder 2 teaspoons

  • Tamarind pulp 1 tablespoon

  • Salt to taste

Method

Step 1

Heat 4 tbsps oil in a deep non stick pan. Add ¼ tsp turmeric powder and eggs and sauté, rotating the pan, for 1-2 minutes. Once the eggs are well coloured, drain and place them in a bowl.

Step 2

Add 1 tbsp oil to the same pan. Add methi dana, mustard seeds, red chilli, curry leaves and onions and sauté till lightly browned.

Step 3

Dilute ginger-garlic paste with 1 tbsp water and add to the pan and mix well. Add the remaining turmeric powder, coriander powder, cumin powder

Step 4

and red chilli powder and sauté for 1 minute. Add ½ cup water and mix. Add tamarind pulp and salt and mix well.

Step 5

Add eggs and cook for 1-2 minutes or till the eggs are heated through. Serve hot.
