Fried Prawns in Mushroom Ginger Sauce

Prawns rolled in cornflour, deep fried and served with ginger flavoured mushroom sauce. This stir-fry of shrimp, mushroom, and snow peas gets its flavor from cooking with a soy sauce and ginger mixture. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Fried Prawns in Mushroom Ginger Sauce

  • 8-10 Medium Prawns shelled and deveined
  • 1 cup Mushrooms thinly sliced
  • 2 tablespoons Ginger strips
  • for deep-frying Oil 1 tablespoon +
  • Cornflour 4 tablespoons + for coating
  • 1 tablespoon Garlic finely chopped
  • 1 medium Onion sliced
  • to taste Salt
  • 1 teaspoon Crushed black peppercorns
  • 1 cup Green capsicum juliennes
  • 1 teaspoon Sugar
  • 1 tablespoon Vinegar
  • 2 tablespoons Dark soy sauce
  • 1 1/2 cups Vegetable stock
  • 2 tablespoons Chopped fresh coriander leaves

Method

  1. Heat sufficient oil in a kadai.
  2. Take cornflour on a plate, coat the prawns in it and deep-fry in hot oil. Drain on absorbent paper.
  3. Heat one tablespoon oil in a non-stick pan, add garlic, ginger and onions and sauté till the onions turn brown.
  4. Add capsicum, salt, crushed peppercorns, sugar, vinegar and soy sauce and mix well. Add one cup vegetable stock and stir well.
  5. Add mushrooms and cook for a minute or till the mushrooms turn soft.
  6. Take 4 tablespoons cornflour in a bowl, add remaining vegetable stock and mix well to make a smooth slurry. Add the slurry to the mushroom mixture and mix well.
  7. Add fried prawns to the mushroom sauce and toss lightly.
  8. Serve hot garnished with coriander leaves.
