By Sanjeev Kapoor 08 Mar 2019 in Recipes Course New Update Main Ingredients Rice, Oil Cuisine Fusion Course Rice Prep Time 21-25 minutes Cook time 6-10 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Fried Rice 1½ cups Rice cooked in 3 cups vegetable stock 1 tablespoon Oil 1 inch Ginger finely chopped 1 tablespoon Garlic chopped 1 medium Carrot peeled and cut into cubes 50 grams Tofu cut into cubes 2 tablespoons Edamame beans 2-3 tablespoons Sweet corn kernels to taste Salt to taste Crushed black peppercorns 1 tablespoon Light soy sauce 1-2 stalks Spring onion greens sliced diagonally 1 cup Mixed capsicum cubes Method Heat oil in a non-stick wok. Add ginger and garlic and sauté for 30 seconds. Add carrot and sauté for 1 minute. Add tofu, edamame beans and corn kernels and toss on high heat. Add rice and toss well. Add salt and crushed peppercorns and mix. Add soy sauce and toss. Add spring onion greens, toss well and cook for 1 minute. Add mixed capsicums, toss well and cook for 1 minute.
